This is a little something I threw together in the crock pot yesterday. It turned out to be a pretty fun and unusual dish. If you like the sweet+meat gig, then you’ll like this too I imagine! I served it over some delicious Bulgur Pilaf and it was quite tasty!
4 chicken breasts (boneless, skinless)
2 Cups Chicken Stock
1 tsp garlic powder
salt to taste
pepper to taste
3 apples, cored, skinned and thinly sliced
1 Cup Applesauce
1/2 Cup Apple Cider Vinegar
1 T honey
1/4-1/2 C dijon mustard (depending on how much you like mustard)
2 T dark brown sugar
5 slices thick cut bacon (not maple!) sliced/chunked
Toss it all in the slow cooker, set it to 8 hours and WALK AWAY!
Shred the chicken with a couple of forks just before you dish it up over the tops of some yummy bulgur wheat pilaf . Mmmmmmm! Great with a crisp salad!
