Lemon Lime Crinkle Cookies

light and sweet!

I got this recipe off Pinterest! It is totally delicious, especially if you like citrus. These cookies are light and sweet. (note: these cookies originally call for lemon zest. I altered the recipe and put lime in them just to jazz it up. But they are both good)

1/2 Cup butter, softened (1 stick)
1 Cup granulated sugar
1/2 teaspoon vanilla
1 egg
1 teaspoon lime zest
1 Tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon baking powder
1/8 teaspoon backing soda
1 1/2 Cups flour
1/2 Cup powdered sugar


Preheat oven to 350 & grease baking sheets (I use a silpat liner)

In a large bowl (I used my mixer), cream butter and sugar until combined. Whip in vanilla, egg, lime zest and lemon juice. Scrape sides of the bowl, then mix again.

Stir in dry ingredients (excluding the powdered sugar) slowly, until just combined. Scrape sides of the bowl and then mix again, briefly.

Pour powdered sugar onto a plate. Using a melon baller for portioning, roll balls of dough in powdered sugar. Place on baking sheet and bake at 350 for 9-11 minutes. Cookies should look matte, not shiny. Remove from oven and cool 5 minutes before transferring to cooling rack. Makes 1 1/2 dozen cookies
